Culinary Philosophy: “There should always be a sense of immediacy. In great dishes, you will find the best products and least amount of technique. For a cook, sometimes that simply means getting out of the way and letting the product speak for itself. Also, if possible, although never easy, seek to find a cultural root for the dish. If a dish has no lasting cultural bond, or no sense of tradition, then maybe it’s only a gimmick or a culinary trick. Therefore, beware.”
